Asparagus
Yes, it is asparagus season in New York/New Jersey. This weekend while visiting my family at our Long Island beach house, my sister in law purchased locally grown organic asparagus from Sang Lee Farms. They were brushed with oil , salt and pepper and grilled in a grill pan on the Bar-b-q. Then served over fresh greens also from Sang Lee Farms. My friend, Willy turned me on to grilled asparagus, and once you try it, you will be addicted. Eat up, and enjoy as they are good for you too...
Asparagus are a good source of vitamin B6, calcium, magnesium and zinc, dietary fiber, protein, vitamin A, vitamin C, vitamin E, vitamin K, thiamin, riboflavin, rutin, niacin, folic acid, iron, phosphorus, potassium, copper, manganese and selenium. Nutrition studies have shown that asparagus is a low-calorie source of folate and potassium. Its stalks are high in antioxidants. "Asparagus provides essential nutrients: six spears contain some 135 micrograms (μg) of folate, almost half the adult RDI (recommended daily intake).
